Back by popular demand! Guest instructor Ryan Donovan (Richmond Station, West Side Beef Co.) returns to the SCS Kitchens to lead this demonstration of whole animal butchery. Watch and learn the techniques required to properly butcher an entire cow and discuss other animal butchery techniques. Discover what to look for in a good cut of meat and the taste difference found in 21 day dry aged beef.
All cuts of locally produced organic beef produced during this class will be used by the LCFC in their community meal and food programs, and the Community Access Market.
