She has worked at many acclaimed cheese shops including Cowgirl Creamery, Formaggio Kitchen and Bedford Cheese Shop, in addition to apprenticing in France and Washington. She makes her own cheese and is also well-versed in tasting, educating, and cooking with cheese. She now teaches at the Natural Gourmet Institute and curates a series of House-Made Cheese Suppers in NYC.Rachel Safko is a tea specialist and journalist who writes about everything from French couture to ancient Chinese Yixing teapots. Some of her most recent articles include a cover story for the Edible Manhattan drinks issue about fika: the Swedish art of the coffee break as well as a primer on tea and food pairing in Fresh Cup Magazine. She is a certified tea specialist with the World Tea Academy (soon-to-be certified sommelier) and hosts tea soirées in New York.
