Description
This programme is designed for students with a foundation level plant-based chef certification or anyone that has some experience in a plant-based kitchen and is looking to gain new skills in professional (raw-centric) seasonal cuisine, menu preparation and execution and plating.
It is designed to provide leading-edge tools to any wellbeing practitioner who works with food in some capacity or who would like to introduce leading edge plant-based experiences to their work: food bloggers, and existing or aspiring chefs, recipe and product developers, retreat hosts.
This training will give you confidence, leading edge technical and skills to work in a professional plant-based kitchen; a foundation to understand plant-food and the art of nourishment from a more refined, gourmet perspective; open your own plant-food venture; or to incorporate leading-edge plant-food and holistic wellbeing understanding and practice into your existing project.
ADVANCED RAW-CENTRIC PLANT BASED CULINARY SKILLS
Throughout the three day programme you will be training in small groups and individually from an award winning state-of-art plant based kitchen at Wild Food Café – Islington. You will be guided directly by the practicing wild chefs and will be learning the techniques of plant-based sous-vide, chocolate making, spherification, setting, dehydration and more. You will then be using those skills to create your own dishes, and menus for your final project. Your menus and dishes will be guided and evaluated by the team of chefs.
FOOD STYLING, PHOTOGRAPHY & WRITING
You will also learn the basics of contemporary food styling trends to achieve professional visual representation through the medium of photography; and master your unique language of menu narrative, that is compelling, positive and informative.
HOLISTIC ENTERPRISE, WELLBEING & LEADERSHIP
The nutritional alchemy of ingredients: using and understanding the properties of wild and medicinal plants, foraged foods and superfoods; incorporating medicinal components and flavours into your dishes.
Creating your own unique story of food, brand and vision.
Elemental approach to food and wellbeing and how to apply it from kitchen to everyday practices of full spectrum wellbeing.
Gathering your tribe, using business and enterprise as a positive transformational force.
CERTIFICATION
Upon successful completion of the programme students will be rewarded advanced completion certificates.
THE TEAM
The kitchen modules will be run by a team of wild chefs that have extensive practical experience of both, running day-to-day service in a busy professional kitchen, acute eye for plating and styling techniques, as well as a solid understanding of flavour and texture.
The food styling and visual presentation modules will be run by Aiste Gazdar, the food photographer behind all of the Wild Food Cafe visual language. She has extensive experience working with a number of high-calibre food and lifestyle photographers, as well as having her own photography business prior to starting Wild Food Cafe and becoming a visual story teller at the heart of the brand.
The holistic enterprise, wellbeing & leadership modules will be run by Joel & Aiste Gazdar, the founders of Worldwide Wellbeing, Wild Food Cafe and Wild Food Cafe School, long-term wellbeing alchemists and the heart & mind behind the Wild Food Cafe brand and community.
